Vegetable Chowder

Sorry so many posts! I'm catching up! One of my friends in the Social Work Program had this recipe on her blog and it was so good, I had to share it!

Vegetable Chowder
Ingredients:

2 Tablespoons butter
1/2 cup chopped onion (I didn't add any because I'm not a huge onion fan)
1 cup finely chopped carrot/shredded carrots
3 celery sticks, finely chopped 
1 Tablespoon minced garlic
4 cups chicken broth (My friend said the first time she made it, it was really watery. She said to  substitute one cup of broth for a can of Cream of Chicken Soup. It is a lot better. If you do it this way it would be 3 cups chicken broth and 1 can Cream of Chicken Soup.)
2 large baking potatoes, peeled and chopped
1 Tablespoon flour
1/2 cup water
2/3 cup milk
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese

Instructions
Melt butter in a large soup pot. Add onions, carrots, and celery and saute over medium heat or until tender. Add garlic and cook an additional 1 to 2 minutes. Add chicken broth (and Cream of Chicken Soup if you choose to) and potatoes, bring to a boil, and cook until the potatoes are tender. Mix flour with water, add, and simmer until the soup is slightly thickened. Add milk and broccoli and cook until broccoli is tender and soup is heated through. Stir in cheese and allow to melt.
